What's cookin'?

Haitian food it is!!! Today I went to our hospital kitchen and helped, or at least tried to help, with making food.

We have several different ladies who work in the kitchen to keep our clinic staff well fed. Monday thro' Friday we prepare to feed about 35 people - the staff for both the regular day clinic and the cholera centre. Saturday and Sunday it's approx. 17-20, only the staff of the cholera centre.

Here is the sauce for today - legume, as it is called is made with any sort of vegetable and green you could think of.Throw it all in a pot and cook it . Then you pound it into a 'mush' and add tomato paste,spices and oil. The pan beside has canned turkey chunks being fried in oil-these also get added to the legume which then gets served with rice and beans. Big, bigger, biggest! It never ceases to amaze me at the size of the rice pot! Today we served about 20-23 people from this pot.


My dear friend Mimise is dishing up plates of rice and beans. She cooks here at the clinic Thursday - Sunday. She can 'cook up a storm' in no time-delicious rice and beans or tasty sauces made of veggies n spices.
